As I announcement previously, in celebrating my new blog design and as a token of appreciation for your continuous support, I am giving away a brand new 5.5-qt enamel cast iron Dutch oven.

For those of you who are not familiar with cast iron cookware, Dutch oven is one of the most versatile kitchen tools I’ve ever come across. It braises, it grills/stews, it sears, it sautes, and it even bakes. If it also steams, it’d almost be as versatile as my good old cast iron wok!

Whether you are a serious homework and just starting out, a Dutch oven is something I always recommend checking it out if you don’t already have one.

    I am from a large German family and very proud to keep the old recipes alive.  A dutch oven is perfect for sauer braten!  I can marinate the meat with vinegar, all spice and bay leaves; place in dutch oven for 2 days and go right to the stove to slowly cook until fork tender.

    I like making one pot whole chicken dinner recipes.

    This pretty simple but produces a wow effect.

    Take a ‘picnic’ pork roast and brown it on the outside. Stick it in a dutch oven with some browned onions, the whole tomatoes from a can of whole tomatoes, some Mexican oregano, some salt and ground black pepper, a bay leaf  AND a magic liquid that you make in your blender that will consist of the liquid from the tomato can, another can of crushed tomatoes (use only the good kind!), 3 cloves of garlic, an entire small can of chipotle chiles in adobo sauce (La Morena is the best), a splash of apple cider vinegar and (this is very important!) 3 or 4 tablespoons of cornmeal – all pulverized to a smooth consistency in the blender.

    Cook at 325 degrees for 45 minutes then reduce to 210 degrees and cook for 4 to 6 hours (depending if your pork roast is huge or not). NEVER open the lid during this process.

    Take the pork out and tear it up with two sturdy forks (or bear claws of you have those, which every cook should) and put it back (sauce and all) in the oven for 15 minutes or so.

    You can make tacos out of this, you can serve it over rice, you can stand in the kitchen eating it out of the pot if needs be.

    my wonderful mother who lived to 94 was a great cook and enjoyed me cooking for her..one of her favorite recipes which she let me cook WITH her was ” mexican oatmeal soup ” which we cooked in a heavy enameled over cast iron covered vessel made in poland…i still have it !
