I have been a little busy with other things that posting a full recipe has become a real luxury for me! I had to even skip the memorial weekend when most other food bloggers posted big feast and fancy recipes. I hope I don’t lose your attention and I promise as soon as things calm down a little bit I’ll return to the routine.

If you read my previous post, I mentioned about my small pot of basil I am growing this year. Well since my last post, I have decided to snap a picture of the basil each week to track the growth. As you can see, in two weeks the plant has grown quite a lot. Hmmm I wonder how much longer I have to wait before I can use it…

Chocolate Cheerio Krispie

Finally, I need to confess that I have not been cooking (and taking pictures of my food) much lately so I won’t share a “real” dish today. However, if you enjoy snacking on snack bars between your meals you will love this Cheerio Krispie I am going to share.

The Cheerio Krispie recipe was directly inspired by the recipe for Rice Krispie. I just happened to have some excess cheerios that I was getting tired of so I decided to make some snack bars out of them. I was really surprised by how easy it was to turn these plain Cheerios into some seriously delicious snack bars.

If you are like me who thinks the commercial Rice Krispie bars are a tad too sweet then you’ll love making Cheerio Krispie bars at home because you can easily adjust the sweetness and stickiness according to your own taste.

Let’s jump right into the step by step illustrations:

Mix the Cheerios with the white and milk chocolate chips. In a large skillet melt the butter over VERY low heat.

Add the marshmallow to the skillet. Gently mix the marshmallow with the melted butter over low heat until the mixture is creamy, sticky, and smooth.

Add the Cheerio and chocolate chips mix to the sticky mixture. Mix rigorously with a spatula until each cheerio is covered with a layer of sticky mixture. Once the cheerios are well incorporated, transfer the cheerios to a baking pan and spread the top as even as possible. Use a wax paper to help you flattening it. Let it cool to the room temperature. Just cut up the block and you have your freshly made Cheerio Krispie treats!

Ingredients

  • 3 cup cheerio
  • 4 cup mini marshmallow (or 3.5 cups mini marshmallow and 0.5 cup milk)
  • 3 tbsp butter
  • ½ cup white chocolate chips
  • ½ cup milk chocolate chips
  • 1 tbsp sprinkles for garnish

Instructions

  1. Mix the Cheerios with the white and milk chocolate chips.
  2. In a large skillet melt the butter over VERY low heat.
  3. Add the marshmallow to the skillet. Gently mix the marshmallow with the melted butter over low heat until the mixture is creamy, sticky, and smooth. (You can adjust the sweetness by substituting milk with a small portion of marshmallow)
  4. Add the Cheerio and chocolate chips mix to the sticky mixture. Mix rigorously with a spatula until each cheerio is covered with a layer of sticky mixture.
  5. Once the cheerios are well incorporated, transfer the cheerios to a baking pan and spread the top as even as possible. Use a wax paper to help you flattening it. Let it cool to the room temperature. Just cut up the block and you have your freshly made Cheerio Krispie treats!

    This sounds like a great snack for my kids! They eat chocolate cheerios once in a while and I have them in my pantry! I happen to have lots of marshmallows too from roasting marshmallows, so this recipe is ready to go! Thanks Yi!

    I love the idea of weekly photo updates on your basil plant! And I agree with you that commercial Rice Krispie treats are too sweet. Really like the idea of substituting Cheerios (another childhood favorite). Genius! Don’t worry about posting frequency – we’ll still be here, patiently waiting to read your latest.     Hi Yi! Hope you have been keeping busy with lots of fun stuff! Your new posting reminds me of the Rice Krispie treats we made while I was much younger. They certainly are easy to make and delicious to eat. And you are right about the sweetness of store bought cereal snack bars, they are so sweet that my teeth hurt just thinking about it!
